Turkey Polpettone (Meatloaf)

1.5 pounds ground turkey

1 cup chopped Mushrooms (White)

1/2 cup Italian seasoned bread crumbs

1 egg

1 Shallot (Finely chopped)

Mozzarella (Fresh or Smoked)

Fresh Basil


Worcestershire Sauce


1 Cup Marinara

Mix all Ingredients by hand. Reserve the Basil, Mozzarella and Marinara.

Lightly olive oil the bottom and sides of standard non-stick bread pan.

Place 1/2 of the turkey mixture into the bottom of the bread pan.

Layer the mozzarella and basil leaves along the middle, be sure to press down lightly .

Cover the mozzarella and basil with a second layer of the turkey mixture.

Bake at 375 for 30 minutes. This works well in a toaster oven.

Remove and allow to cool for several minutes.

Use a knife to trace between the edges of the bread pan and Meatloaf.

Flip the bread pan upside down, the meatloaf should slide out in one well formed piece.

Heat up marinara and serve sliced.
