Crab cakes can be served in a number of ways…I prefer to make a crab cake as an hors d’oeuvres for cocktail parties, and present it in a small desert cup with a spicy mayo and mango salsa…

  • 1 (16 ounce) can canned lump crabmeat
  • chives, chopped finely
  • 3/8 cup olive oil
  • 1 egg
  • 1 tablespoon mayonnaise
  • Handful of Italian seasoned breadcrumbs as ‘binder’
  • 1/4 teaspoon Old Bay Seasoning
  • salt/pepper to taste
  • ground black pepper to taste
  • 1 cup panko (Japanese bread crumbs) for the outside
  • Lemmon Juice
  • Hot Sauce
